Salmon Tacos

- Salmon:
- ½ pound salmon
- Kosher salt
- Freshly ground black pepper
- ½ Tbsp smoked paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp extra-virgin olive oil
- ¼ cup green cabbage, sliced
- ¼ cup purple cabbage, sliced
- Salsa:
- 1 12- ounce can diced pineapple
- 2 ripe avocados, pitted and diced
- ¼ cup red onion, peeled and diced
- 2 small tomatoes, diced
- Juice from 1 lime
- Salt to taste
- Tacos:
- 2 corn tortillas
- 1 small bunch of cilantro, chopped
- 1 lime, sliced for toppings
- Pat salmon dry, then season all sides of the filets with salt, pepper, paprika, chili powder, and garlic powder.
- Heat the oil in a large skillet over medium heat.
- When oil is hot, add the salmon. Cook until golden, around 5 minutes, then flip and cook the other side for an additional 3 minutes, until the salmon is cooked through. Remove from heat and let rest.
- Make the salsa, add pineapple, avocado, onion, tomatoes, and lime juice to a bowl. Add a pinch of salt. Mix.
- Flake salmon with a fork.
- Warm your tortillas on a skillet then top with salmon, cabbage, fresh salsa, and cilantro.
- Serve with lime wedges to add an extra zing.
