Tomato Zucchini Bake

This side dish is a classic in my home. We serve it so often because it is fast, delicious, and a great accompaniment with so many different entrees. I pre-prep the zucchini and put it in the fridge. Then, when I want to cook it, I just pull it out and put it in the oven. This is fantastic to bring to parties, too, because it’s beautiful and a great way for all people to get some veggies in.

Ingredients
- Misto Olive Oil Spray or cooking spray
- 3 green zucchinis, sliced down the middle in the long way
- 2 roma tomatoes, sliced
- ¼ red onion, sliced thinly
- 2 Tbsp parmesan cheese
- ½ tsp garlic powder
- Salt & Pepper to taste
Instructions
Pre-heat the oven to 400° Bake. Spray a glass pyrex dish with a Misto or cooking spray.
Line the zucchini in a row.
Add the sliced tomatoes.
Add the sliced onions.
Sprinkle on the garlic powder, parmesan cheese, salt, & pepper and spray once again with the cooking spray or Misto spray.
Put in the oven and bake for 35 minutes. It’s easy and delicious. (This is great to bring as a side dish to parties, too!).

Oh thank you! I was looking for this repice everywhere. My great grandmother gave me the ingredients but never got to show me how to prepare it. She use to bake it in the oven do u know how to prepare it that way. I would love it if you told or showed me how . im so happy! thanks a lot! God bless!
