Tomato Zucchini Bake is a recipe from my childhood. It was originally given to my Mom from her sister, Susan. *Thank you Auntie Susan! My Mom made this dish quite often when we were growing up. She also brought it to parties and everyone loved it.

I’ve continued with this tradition by making this classic dish a staple in my home for our dinners, too. In addition, just like my Mom, I bring Tomato Zucchini Bake to parties and people devour it. It’s always nice to have an easy-to-make, delicious vegetable side dish. It pairs well with so many entrees. You can easily pre-prep the meal and put it in the fridge. When you are ready to cook it, just pull it out and put it in the oven. Everyone will be pleasantly pleased.

*I like using a Misto Spray bottle which I fill with my own Extra Virgin Olive Oil. The Misto Spray bottle allows you to use whatever oil you want without any additional fillers or additives, so it’s nice to have on hand when you need an oil spray.

Ingredients
  • Misto Olive Oil Spray or cooking spray
  • 3 green zucchinis, sliced down the middle in the long way
  • 2 roma tomatoes, sliced
  • ¼ red onion, sliced thinly
  • 2 Tbsp Parmesan cheese
  • ½ tsp garlic powder
  • Salt & Pepper to taste
Instructions
  1. Pre-heat the oven to 400° Bake. Spray a glass pyrex dish with a Misto or cooking spray.
  2. Line the zucchini in a row.
  3. Add the sliced tomatoes.
  4. Add the sliced onions.
  5. Sprinkle on the garlic powder, Parmesan cheese, salt, & pepper and spray once again with the cooking spray or Misto spray.
  6. Put in the oven and bake for 35 minutes. Remove and enjoy.
