Tis the season of the pumpkin. I’m officially obsessed with this 3-Ingredient Pumpkin Spice Muffin Recipe. I love, love, love everything pumpkin and I could eat pumpkin dishes all day long.

For example, Trader Joe’s has their amazing pumpkin Greek Yogurt, pumpkin butter, pumpkin mocha ice cream, and pumpkin cranberry crisps.

They are all delicious. Let’s just make pumpkin everything! I’m game. Not only does pumpkin taste exquisite, it has carotenoids which are fabulous for your eye sight and skin health. So bring on that wrinkle-free glow while you enjoy all these pumpkin recipes.

Below is my 3-Ingredient Pumpkin Spice Muffin Recipe

3-Ingredient Pumpkin Spice Muffins

Ingredients
  • 1 (18.25-ounce) box spice cake mix (any brand you like)
  • 1 teaspoon pumpkin pie spice (¼ tsp cinnamon, ¼ tsp allspice, ¼ tsp ground nutmeg, ¼ tsp clove)
  • 1 (15-ounce) can pumpkin puree (not pumpkin pie mix)
Instructions

  1. Preheat oven to 350°F. Combine all ingredients into a medium bowl.

  2. Mix until all dry ingredients are moist.

  3. Line a muffin tin with paper muffin cup and fill each just over halfway full. Bake for about 18 minutes.

  4. Muffins are done if a toothpick comes out clean after being stuck in the middle.

  5. Cook for 2 minutes at a time after 18 minutes if muffins still aren’t done, checking with a toothpick.
