This Jack-O-Lantern Pita recipe is fun and festive for Halloween. It is easy to prepare, so let your kids get involved. You can use veggies you have on hand and get creative with the eyes, nose, or mouth. For example, I used mushrooms in one version and tomatoes for the eyes in the second version. Make these delicious snacks for Halloween and everyone will love them!

Ingredients
  • 2 Pita breads
  • ¼ cup Hummus
  • ½ small carrot
  • ½ small bell pepper
  • 4 Mushrooms slices (sub tomatoes or olives)
Instructions
  1. Warm up pita breads in the oven or microwave.
  2. Add 2 Tbsp of hummus onto each of them in vertical lines which will act as the pumpkin stripes.
  3. Make the eyes by using sliced mushrooms, tomatoes, or olives.
  4. Cut bell pepper in half. Use bottom half to make the lips (refer to the photo).
  5. Chop the carrot for the noses and for the tops of the lanterns.

Date Bugs are a delicious and spooky treat. For grown-ups, I recommend a little tahini filling and a tiny pinch of salt. For kids, I recommend a salted nut butter and no—sugar added jam to replicate the peanut butter and jelly favorite. Get creative, feel free to add some semi-sweet or dark chocolate to these. Keep in mind, dates are already sweet with a caramel-like flavor. Dates are a great alternative to candies as they contain fiber, minerals, and potassium.

  • 4 Medjool dates, pitted
  • 4 rosemary, sprigs
  • 2 tsp tahini (sub nut butter)
  • Jam (optional)
  • Dark chocolate drizzle (optional)
  • Pinch of Sea salt (optional)
Instructions
  1. Remove the pits of the dates.
  2. Add a ½ tsp of tahini or nut butter of choice. Feel free to add additional toppings.
  3. Then, add the bug antennas using rosemary. Enjoy these simple treats.
