My 5 Favorite One-Pot Meals To Simplify Life

I prefer simplicity and ease in my life. Most days, my life seems like a never-ending checklist with things to do, places to go, and obligations to complete. When it comes to cooking, I enjoy eating delicious food. However, I want that food to be easy to cook and, most importantly, easy to clean up! Therefore, having a meal in one pot means less dishes and simplicity! Here are my 5 favorite one-pot meals to make that are low fat, well-balanced, delicious, nutritious, and effortless!

chili5 Baked Bean Chili: This is one of my favorite dishes for dinner, parties, barbeques, and more. I love it because you make 1 big pot of the chili and you can serve many mouths. A true classic comfort meal in one-pot.


 

20121217-100629.jpgClassic Roasted Chicken: I love my roasting pan and by adding in potatoes and carrots, you’ve got your protein, starch, and vegetable all in one-pot and the dish is so easy to prep, too!


 

tunanoodleTuna Noodle Casserole-Revamped: My version of the tuna noodle casserole includes broccoli which gives you veggies in your pasta and protein mix! Enjoy the easy clean-up with this classic, cheesy one-pot meal.


 

20121105-113505.jpgRainbow Vegetable Chili: This chili is loaded with vegetables you get every color of the rainbow in it! Since you add tofu and black beans, you have protein from the tofu and beans and starch from the beans. Therefore, your chili has all the necessary components of a wonderfully nourishing and satisfying meal!


Balsamic Glazed Chicken

Mustard Balsamic Glazed Chicken With Butternut Squash: This crockpot dish is simple to prepare and easy to make with no extra cooking on your part! Just marinate the raw chicken overnight. In the morning before work, layer all the ingredients in the crockpot and you’re ready to eat a well-rounded meal when you get home! Fantastic!

    I am with you on the simplicity. These recipes look great. I make a lot of “bowls” in our house so that we just have a bunch of fresh ingredients available and then use greens or grains as a base then assemble veggies and protein on top. Quick & easy!

    Hi Sarah, these sound amazing, especially the last one. And thank you for the chili variation! I make veggie chili too but sometimes just get tired of it.

    Something I have been making recently that I like a lot is sort of a veggie greek pizza. I use the small personal pizza crust but instead of tomato sauce I use a basil pesto, sliced tomato, feta cheese, artichoke hearts, and Klamata olives. It’s amazing!

    Yummy stuff. By any chance, do you know any place to find canned/packaged tuna that DOESN’T have soy in it? I had to give it up when I discovered an intolerance, and Tuna steaks just aren’t the same.

    I love a good one pot meal! Roast chicken is my go-to, and lately I’ve been loving slow cooked pork belly. Just stick it in the slow cooker and go! Thanks for the recipe inspiration! x
