Mozzarella, Parmesan, Arugula, and Egg Flatout Flatbread Pizza + Giveaway

Pizza time is here again and I’ve been obsessed with adding an egg to my pizza.

I originally tried the egg over pizza back in 1999 when I was living in Madrid, Spain. The concept was weird, but the taste factor made complete sense. 6_FINAL_Flatbread_6

You have an over-easy or sunny-side up egg which you use the pizza crust to soak up the yolk. Genius.

I’ve recently noticed many restaurants in San Francisco adding this topping to flatbreads, pizzas, and more.

To make this flatbread pizza quick and easy, I used Flatout Flatbread which is high in fiber (9 grams per serving). This pizza is not only delicious, it also has lots of protein, greens, and fiber.

Ingredients
  • 4 pieces Light Italian Flatout® Flatbread
  • ½ cup DiGiorno® Parmesan Shaved Cheese + more for a little sprinkling
  • 1 cup Shredded Mozzarella Cheese
  • Cooking Spray
  • 4 Eggs
  • ½ package Marketside® Arugula (2.5 oz)
  • 2 Tbsp White Wine Vinegar
  • 1 Tbsp Extra-Virgin Olive Oil
  • Salt & Pepper to taste
Instructions

  1. Preheat the oven to 375° Bake. Spray a baking pan with cooking spray. Place the Light Italian Flatout® Flatbread on the pan and cover the 4 pieces evenly with the parmesan and mozzarella cheese. Bake in the oven for 3 minutes.

  2. Meanwhile, spray a small skillet with cooking spray. Crack the eggs in it and cook them sunny-side up for about 1 ½-2 minutes each.

  3. Take the Light Italian Flatout® Flatbread out of the oven and place the eggs over the bread. Place in the oven and bake for another 3 minutes.

  4. While the pizza is baking, mix the arugula with the vinegar, oil, salt, and pepper.

  5. Remove the pizza from the oven and top with the arugula salad.

  6. Sprinkle a little extra parmesan cheese over the top (optional). Cut and serve. Each person gets his/her own personal pizza.
