Cheesy Protein Mashed Potatoes

Nothing feels like comfort as much as mashed potatoes do. This recipe is a spin on the classic mashed potatoes and it is made with cheese to make this Cheesy Protein Mashed Potatoes. This is a no fuss recipe that does not require you to peel the potatoes. In fact, the skin has a higher fiber content which contributes to feeling more full. Furthermore, potatoes are an excellent source of vitamin C and potassium, which can help keep your skin strong and looking its best. Additionally, you get a boost of protein with this recipe because of the addition of the cottage cheese and milk.

Bonus Alert: Each 1/2 cup serving provides 10 grams of protein and only 2 grams of fat! Talk about health at its finest.

*I love using this immersion blender because I can blend everything in the pot without having to transfer to another blender, which results in less dishes and clean up.
