Delicious & Healthy Mashed Potato Recipe

This is a classic spin on mashed potatoes with a bunch of cheese to make the flavors delicious! You can sprinkle with chives at the end for some added green color. The cottage cheese, milk, and Parmesan add to the protein content to feel extra full!

Ingredients
  • 3 Russet Potatoes, sliced into big chunks
  • ½ cup nonfat milk
  • 1 cup fat free cottage cheese
  • ½ cup shredded Parmesan cheese
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • Salt & Pepper to taste
Instructions
  1. Boil the water and add the potatoes.
  2. Cook for about 8 minutes until the potatoes are soft when you poke them with a fork.
  3. Drain.
  4. Add in all the other ingredients to the pot with the potatoes.
  5. You can use a masher to mash up the potatoes OR you can use a hand-held blender.
  6. Mash & Serve!
