Crock Pot Guinness Corned Beef and Cabbage

St. Patrick’s Day is here again and we’re going to celebrate with a delicious Crock Pot Guinness Corned Beef and Cabbage recipe. Using the slow cooker to make the Corned Beef allows the meat to get so tender, it just melts in your mouth.

Using the slow cooker to make the Corned Beef allows the meat to get so tender it just melts in your mouth. The can of Guinness adds extra flavor and Irish flare. Your entire family will enjoy this one-pot meal. Simply chop the vegetables, put them in the crock pot with the corned beef, and you’re good to go in just 8 minutes of prep. Ingredients
  • 3 pounds of corned beef with seasoning packet
  • 1 onion
  • 4 carrots
  • 8 small-medium red potatoes
  • 3 Tbsp yellow mustard
  • 1 14.9 ounce can of Guinness beer
  • 1 small-medium head of cabbage
Instructions

  1. Dice the onion. Slice the carrot into big slices. Cut the potatoes into 4 or 6 pieces, depending on the size. Rinse the corned beef under cold water and pat dry. Place the diced onions on the bottom of the crock pot.

  2. Place the corned beef on top of the onions with the fat side down. In a small bowl, mix the yellow mustard with the seasoning packet that comes with the corned beef.

  3. Rub the mustard mixture on top of the corned beef.

  4. Place the potatoes and carrots around the corned beef. Pour the Guinness on top. Cook on LOW for 8 hours.

  5. Slice the cabbage in half, remove the core. Chop the cabbage into big wedges.
    Remove the corned beef from the crock pot and place in a dish.

  6. Add the cabbage to the crock pot with the other vegetables and sauce. Mix slightly so the cabbage gets covered. Cook the veggies on HIGH for 1 more hour.

  7. Slice the corned beef and serve when the vegetables are ready.

      Thanks, Phil! Cooking the corned beef in the crock pot with the Guinness gives the meat that extra flavor & it cooks the meat without you having to monitor the stove top.

    Only 1 can of beer, no water or broth? This has enough liquid to cook and not dry out? Thanks!

      Yes! Just 1 can of beer. The meat has a lot of natural fat so it keeps everything moist.

    Don’t have Guinness beer..can any beer do?

      Hi Diane: You can use any beer. However, I recommend a dark beer like a Porter or Stout. Guinness is a stout so you’ll have a similar consistency and flavor.

    Corned beef brisket tends to be salty..does the beer help to cut down on that…

      Hi Diane: The beer doesn’t cut down a ton on the salt. It does dilute the seasonings, slightly. However, you can rinse the brisket before putting it in and not add the packet to reduce the salt content.

    Hello,
    Sounds great! My only question and worry is if the potatoes will disintegrate after 9 hours in a crock pot?
