Quick & Easy Turkey or Chicken Asian-inspired Lettuce Cups

- 1 tsp sesame oil
- 3 cloves garlic
- 2 Tbsp fresh ginger, grated
- 1 pound ground chicken or turkey 93% fat free
- 3 Tbsp low-sodium soy sauce
- 3 Tbsp rice wine vinegar
- 2 Tbsp chili garlic sauce
- 1 can water chestnuts, drained
- 4 green onions
- 1 head butter leaf lettuce

Mince the garlic. 
Peel and grate the ginger. Over medium heat, pour the sesame oil into a pan. Add the garlic and cook for 1-2 minutes. 
Add the ground turkey/chicken, ginger, soy sauce, rice wine vinegar, and chili garlic sauce. 
Mix and cook for 5 minutes. Stirring occasionally until the meat is cooked through. 
In the meantime, chop the water chestnuts and green onions. 
Wash the butter leaf lettuce. When the meat mixture is done cooking, remove from the heat. 
Mix in the water chestnuts and green onions. Let the mix cool. 
Fill up each lettuce leaf with 1-2 spoons of chicken/turkey mix (this will vary depending on how big the different lettuce leaves are). This is best served at room temperature. You can pre-make the filling and pre-wash the lettuce leaves, but don’t stuff the lettuce leaves until you want to serve them. Then, the day of your event or party, simply spoon the mixture into the lettuce leaves and you’re good to go.
