Chicken Bullet Bread Italian Sandwich

Talk about a hearty Italian-style sandwich! Here’s a simple Roasted Chicken sandwich using leftover rotisserie chicken meat. As the Italian’s say, “it’s all about the bread” so using that bullet bread is key to making the sandwich more like a sub. The sandwich is fast, delicious, and very satisfying! The roasted red peppers make a huge difference in the sandwich by offering a sweet flavor to the acid from the balsamic vinegar.

Ingredients
  • 8 oz chicken breast, shredded (I use chicken from the rotisserie chicken)
  • 4 bullet breads
  • 1 cup shredded lettuce
  • 2 roasted red peppers (you can use it from a jar or roast your own. I used the jar version for simplicity), sliced
  • 4 oz mozzarella, sliced or shredded
  • 1 Tbsp Olive Oil
  • 1 tsp Balsamic Vinegar
  • Salt & Pepper to taste
Instructions
  1. Slice bread in half.
  2. Drizzle bread with olive oil & balsamic vinegar.
  3. Add 1 ounce shredded mozzarella and about 2 ounces of shredded chicken, plus lettuce & peppers to each sandwich.
  4. Season with salt & pepper for the perfect Italian sandwich.
