This Carrot-Ginger Salad Dressing is super fast, simple, and gourmet. I use a Vitamix Blender to easily puree the ingredients. You can also use a food processor. The dressing includes Asian-inspired flavors such as ginger, mirin, rice vinegar, sesame oil, and soy sauce. It tastes absolutely lovely just topped over some mixed greens. The vibrant orange color makes any salad pop. Feel good when eating this antioxidant-rich dressing that is wonderful to top on any salad fixings of choice.

Ingredients
  • 1 shallot
  • 1 carrot, chopped into 3 pieces
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons mirin
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon soy sauce
  • 2 teaspoons peeled fresh ginger
  • 1 teaspoon Asian sesame oil
Instructions
  1. In a blender or food processor, puree all of the ingredients until smooth.
  2. Serve over any salad of choice.
