Here’s a take on a classic loaded baked potato with a ton more nutrients and flavor. The filling can be done in less than five minutes, making it great for those jam-packed, busy days.

Ingredients
2 medium sweet potatoes, thoroughly washed
½ cup red bell pepper, deseeded and diced
1 green onion, thinly sliced
1 cup low-fat cottage cheese or ricotta
*for a vegan version, skip the cheese and use nutritional yeast
Kosher salt, pepper, and paprika, to taste
Instructions
Wash and cook the sweet potatoes at 425 degrees Fahrenheit for 45-50 minutes or until fork tender.
While the sweet potatoes are cooking, chop bell pepper and green onion.
When the sweet potatoes are ready, remove them from the oven.
Cut the sweet potato in half and fill with cottage cheese, ricotta, or nutritional yeast.
