Ingredients
  • 1 can (12 ounces) no salt added diced tomatoes, liquids and solids
  • 2 cloves garlic, chopped
  • 1 tsp dried oregano
  • ⅓ rounded cup Kalamata olives, chopped (about 16 olives)
  • 4 boneless, skinless chicken breasts (1 ¼ pound)
  • ¼ cup crumbled feta cheese
Instructions
  1. Preheat the oven to 400°F. Combine diced tomatoes, garlic, oregano, and olives in a mixing bowl and set aside.
  2. Coat a 9x13-inch glass baking dish with nonstick cooking spray.
  3. Place chicken breasts evenly in the bottom of the baking dish. Spoon the tomato mixture evenly over the chicken breasts, then sprinkle with feta cheese.
  4. Bake in preheated oven for 30 to 35 minutes, or until chicken is cooked through and internal temperature reaches 165°F. Serve immediately.
