  • 2 cups raw green apples, diced (1 ½ apples)
  • 1 cup flour
  • 2 tsp cinnamon
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 egg
  • 1 cup sugar
  • ¼ cup melted coconut oil
  • 1 cup raisins
  1. Heat an oven to 350°. Chop the apples.
  2. In a medium bowl, combine the flour, salt, and baking soda. Mix with a spoon.
  3. In a large bowl, mix the egg with the diced apples and cinnamon. Add the sugar and melted coconut oil and stir with a large spoon. Add the raisins. Stir in the flour mixture.
  4. Add the batter to an 8x8 Pyrex dish. Put in the oven for 40-45 minutes.
  5. Use a knife to check for doneness. If the batter clings to the knife, bake it a little longer. If the knife comes out clean, remove the cake from the oven. Let cool for 10 minutes then serve.
