Fig, Caramelized Onions, Goat Cheese, and Arugula Flatbread

My friend came over and brought me some figs from her yard. I’m such a fan of fresh figs. They are pretty versatile, simply sweet, and go really well with savory dishes. Especially when you drizzle some balsamic reduction on the figs and pair it with a creamy cheese…..mouthwatering. Since, I was in the mood for bread and cheese, we decided to make Fig, Caramelized Onions, Goat Cheese, and Arugula Flatbread. You can use any flavored goat cheese. However, we found a fig flavored one, so it just seemed perfect for the dish. Also, if you have a salt grinder, use that when you sprinkle the salt on top. It makes the dish pop a little more.

Ingredients
  • 6 small figs
  • 1 large sweet onion
  • 1 cup arugula
  • 2 ounces crumbled goat cheese (I found a delicious fig-flavored goat cheese)
  • 2 Naan flatbreads
  • ⅓ cup balsamic vinegar
  • ½ Tablespoon brown sugar
  • Salt to taste
  • Olive Oil Spray
Instructions
  1. Preheat the oven to 450 degrees bake. Slice the onion into thin slices. Spray a large sauté pan with the olive oil spray. Over medium-low heat, cook the onion for 15-20 minutes stirring occasionally. Keep the pan covered to help with the caramelization.
  2. While the onions are caramelizing, make the balsamic reduction. In a small sauce pan, heat the balsamic vinegar to a simmer and let cook for about 5-7 minutes until it is reduced by half. Remove from the heat and stir in the brown sugar.
  3. Chop off the tip of the figs. Slice each fig into 3 pieces. Spray a baking sheet with the olive oil spray.
  4. Place the 2 naan flatbreads onto the sheet. Spray these with the olive oil. Layer the caramelized onions on top.
  5. Add the sliced figs and crumbled goat cheese. Cook in the oven for 12 minutes until the bread is browned and the cheese is slightly melted.
  6. Remove from the oven. Add the arugula on top. Drizzle with the balsamic reduction. Add salt to taste.
