This Sheet Pan Romanesco, Honeynut Squash, and Chicken Sausage dish is a deliciously easy and wholesome meal that combines vibrant colors and bold flavors in one convenient pan. Ingredients
1 honeynut squash
2 Tbsp olive oil, divided
1 Tbsp maple syrup, divided
½ tsp dried thyme, divided
1 head romanesco
4 garlic cloves, unpeeled
6 apple and maple mini chicken sausage links
Instructions
Cut honeynut squash in half. Scoop out the seeds. On each squash half, lightly coat with ½ Tbsp olive oil. In the center of each squash, add ½ Tbsp maple syrup and ¼ tsp dried thyme.
Cut romanesco into bite-sized pieces. Lightly coat romanesco and garlic cloves in 1 Tbsp olive oil.
Place squash, romanesco, and garlic on a sheet pan in the oven for 30 minutes.
Remove from the oven and add chicken sausages to the sheet pan. Return to the oven for 5 more minutes. Remove from the oven.
