Ingredients
12 pitted dates
2 Tbsp almond or peanut butter
2.5 oz bittersweet or semisweet chocolate, melted
2 Tbsp coconut flakes
Instructions
Lay out 12 dates on a baking tray, ensuring that all pits are removed. Spoon ½ tsp nut butter into the center of each, encasing the nut butter as much as possible within the date.
Using kitchen scissors, cut 24 small circles or squares out of your coconut flakes. These will be the “eyes” for your monster.
Dip each date into the melted chocolate, submerging completely. Return the date to the baking tray and place two coconut flake eyes onto the date before the chocolate hardens. On top of the coconut flake, dab a dot of chocolate into the middle using a toothpick (to look like a pupil). Place the baking tray with all 12 dates into the fridge or freezer for 1 hour or until chocolate hardens. These can be enjoyed cold or frozen.
