Place your ground turkey in a large bowl. Add the onion, sun-dried tomatoes, spinach, feta, oregano, salt, pepper, and garlic powder. Mix thoroughly to combine.
Heat a large pan to medium and add the olive oil or oil spray onto the pan.
Divide your meat into equal portions, forming round patties in your hands. This recipe can make 4 large patties and up to 6 smaller-sized patties.
Once heated, place the patty on the pan.
Cook the patty for about 4-5 minutes and flip, cooking for an additional 4-5 minutes or until cooked through.
Serve your patty on a bed of lettuce and toppings of your choice, like sliced cucumbers, cherry tomatoes, olives, homemade tzatziki and/or hummus, and a side of sweet potato fries.
