This Mediterranean Turkey Burger Bowl has quickly become one of my favorite meals. It’s packed with flavor, full of colorful veggies, and thoroughly satisfying. I love how the sun-dried tomatoes, spinach, and feta get mixed right into the turkey patties to make each bite incredibly divine. Ingredients
  • 1 lb ground turkey
  • ¼ cup yellow onion, diced or finely grated
  • ¼ cup sun-dried tomatoes, chopped
  • ½ cup packed spinach, finely chopped
  • ¼ cup feta cheese
  • ½ Tbsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 1 Tbsp extra virgin olive oil or olive oil spray
  • For the Bowl:
  • Lettuce of choice
  • Cucumber, sliced
  • Cherry tomatoes, halved
  • Olives, sliced
  • Tzatziki or hummus
  • Sweet potato fries
Instructions
  1. Place your ground turkey in a large bowl. Add the onion, sun-dried tomatoes, spinach, feta, oregano, salt, pepper, and garlic powder. Mix thoroughly to combine.
  2. Heat a large pan to medium and add the olive oil or oil spray onto the pan.
  3. Divide your meat into equal portions, forming round patties in your hands. This recipe can make 4 large patties and up to 6 smaller-sized patties.
  4. Once heated, place the patty on the pan.
  5. Cook the patty for about 4-5 minutes and flip, cooking for an additional 4-5 minutes or until cooked through.
  6. Serve your patty on a bed of lettuce and toppings of your choice, like sliced cucumbers, cherry tomatoes, olives, homemade tzatziki and/or hummus, and a side of sweet potato fries.
