Ingredients
Salmon:
½ pound salmon
Kosher salt
Freshly ground black pepper
½ Tbsp smoked paprika
1 tsp chili powder
1 tsp garlic powder
1 tsp extra-virgin olive oil
¼ cup green cabbage, sliced
¼ cup purple cabbage, sliced
Salsa:
1 12- ounce can diced pineapple
2 ripe avocados, pitted and diced
¼ cup red onion, peeled and diced
2 small tomatoes, diced
Juice from 1 lime
Salt to taste
Tacos:
2 corn tortillas
1 small bunch of cilantro, chopped
1 lime, sliced for toppings
Instructions
Pat salmon dry, then season all sides of the filets with salt, pepper, paprika, chili powder, and garlic powder.
Heat the oil in a large skillet over medium heat.
When oil is hot, add the salmon. Cook until golden, around 5 minutes, then flip and cook the other side for an additional 3 minutes, until the salmon is cooked through. Remove from heat and let rest.
Make the salsa, add pineapple, avocado, onion, tomatoes, and lime juice to a bowl. Add a pinch of salt. Mix.
Flake salmon with a fork.
Warm your tortillas on a skillet then top with salmon, cabbage, fresh salsa, and cilantro.
