Ingredients
  • Salmon:
  • ½ pound salmon
  • Kosher salt
  • Freshly ground black pepper
  • ½ Tbsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp extra-virgin olive oil
  • ¼ cup green cabbage, sliced
  • ¼ cup purple cabbage, sliced
  • Salsa:
  • 1 12- ounce can diced pineapple
  • 2 ripe avocados, pitted and diced
  • ¼ cup red onion, peeled and diced
  • 2 small tomatoes, diced
  • Juice from 1 lime
  • Salt to taste
  • Tacos:
  • 2 corn tortillas
  • 1 small bunch of cilantro, chopped
  • 1 lime, sliced for toppings
Instructions
  1. Pat salmon dry, then season all sides of the filets with salt, pepper, paprika, chili powder, and garlic powder.
  2. Heat the oil in a large skillet over medium heat.
  3. When oil is hot, add the salmon. Cook until golden, around 5 minutes, then flip and cook the other side for an additional 3 minutes, until the salmon is cooked through. Remove from heat and let rest.
  4. Make the salsa, add pineapple, avocado, onion, tomatoes, and lime juice to a bowl. Add a pinch of salt. Mix.
  5. Flake salmon with a fork.
  6. Warm your tortillas on a skillet then top with salmon, cabbage, fresh salsa, and cilantro.
  7. Serve with lime wedges to add an extra zing.
