For a fast and easy, protein-rich dish, Chipotle Shrimp, is extremely flavorful, hearty, and delicious. The best part is finding the majority of the ingredients in your cupboard, such as canned tomatoes* and canned chipotle chiles in adobo sauce. Canned goods are very beneficial because you can access the tomatoes all year round without having to worry about them being in season. The tomatoes are harvested at peak nutritional value maintaining all the rich nutrients for a heart-healthy meal. I love eating Chipotle Shrimp over rice or wrapped in a tortilla like a taco or burrito for a well-balanced, complete meal including your protein, veggies, and grain/starch. I use my Vitamix A230 Smart Blender to easily blend my sauces. It works so well and takes moments to blend up the ingredients.

Ingredients
  • 1 15-ounce can diced tomatoes in juice*
  • 2 canned chipotle chiles in adobo
  • 1 Tbsp chipotle canning sauce
  • 3 garlic cloves, peeled and minced
  • 1 cup chicken broth, fish broth, or water
  • 1 pound medium-large shrimp (21 to 25 shrimp per pound), peeled and deveined, tail can be left on or taken off
  • ½ cup cilantro, chopped
Instructions
  1. In a blender or food processor, add the tomatoes, chipotle chiles, chipotle sauce, and garlic. Blend until smooth.
  2. Over medium heat. Pour in the tomato mixture. Cook for 1 minute, stirring as needed.
  3. Add the broth and stir.
  4. Add the shrimp. Cook for about 5-6 minutes until the shrimp are cooked completely through, stirring as needed.
  5. Remove from the stove. Add the cilantro and serve.
