Sweet Potato and Turkey Meatball Hash

Eat this meal for breakfast, lunch, or dinner. This hearty hash is bursting with antioxidants from the sweet potatoes, bell peppers, parsley, and red onions! This meal is perfect for Father’s Day – so start the day off right with a protein-packed, superfood-filled sweet potato and turkey meatball hash.

  • Cooking Spray
  • 1 sweet potato
  • 1 red bell pepper
  • 1 small red onion
  • 8 turkey meat balls (Trader Joe’s, found in frozen section)
  • ¼ cup fresh parsley
  • salt & pepper to taste
  • Hot Sauce – optional

  1. Chop the sweet potato into ½ inch cubes.

  2. Chop the red pepper and onion.

  3. Chop the parsley. Spray a large frying pan with cooking spray, placing over medium-high heat. Add cubes of sweet potato to the pan, stirring while sweet potato cooks for about 8 minutes or until browned.

  4. While this is heating on the stove, defrost the turkey meatballs. Put the meatballs into a microwave dish and cook in the microwave for 3 minutes until warmed. Remove from the microwave and cut the turkey meatballs into 4 pieces (quarter them).

  5. Add bell peppers, onions, sliced turkey meatballs to the potatoes, cooking for about 3 minutes or until bell peppers and onions are tender. Salt and pepper to taste. You may need to add more cooking spray in order to prevent vegetables from sticking to the pan Add the parsley. Cook for 30 seconds more. Serve with hot sauce if desired.
