Pineapple with Coconut Black Sticky Rice

Black rice is now being sold at Costco! Black rice has so many amazing health benefits from maintaining blood sugars (it’s a whole grain and high in fiber) to possibly reducing risk of Alzheimer’s disease. Black rice is also considered a Superfood due to its many health benefits. The black color contains anthocyanins which are the same antioxidants found in blueberries and other dark blue/purple foods. Anthocyanins can help fight heart disease and cancer. This dish is a fantastic side dish to the Spicy Soy Sauce Marinade recipe.

Serves: 6
  • 1½ cups water
  • 1 cup black sticky rice
  • 1 14-ounce can light coconut milk
  • ½ teaspoon ground cardamom
  • 3 tablespoons packed brown sugar
  • ½ teaspoon salt
  • 1 can pineapple in juice, drained (save the juice for a smoothie or to drink later)
  1. Combine water and rice in a pan and bring to a boil. Reduce heat to simmer. Cover and cook for about 20 minutes. The rice will be half-way cooked and still firm.
  2. Turn on the broiler. Cover a pan with tinfoil (for easier clean-up).
  3. Put the pineapple in the broiler for 8 minutes on each side to get it "charred" looking and cooked.
  4. While the rice is cooking, bring the coconut milk to a boil in another pan. Reduce heat to low and add the cardamom, sugar, and salt. Stir until the sugar and salt are dissolved. Take off the heat.
  5. When the rice has cooked for 20 minutes, add the coconut milk (saving ¾ cup of it to pour over the dish afterwards!). Cover the rice and cook for another 15 minutes.
  6. Serve the rice with the pineapple on top and pour the remaining coconut milk on top.
  7. Eat with the spicy soy sauce marinade and a veggie!

    Black rice is a deep black color and usually turns deep purple when cooked. Its dark purple color is primarily due to its anthocyanin content, which is higher by weight than that of other colored grains but more limited in the number of different anthocyanin species present.’

      Yes! Anthocyanin’s are an antioxidant and great for brain health and have the benefits of potential cancer prevention, too!
