Nothing feels like comfort as much as mashed potatoes do. This recipe is a spin on the classic mashed potatoes and it is made with cheese to make this Cheesy Protein Mashed Potatoes. This is a no fuss recipe that does not require you to peel the potatoes. In fact, the skin has a higher fiber content which contributes to feeling more full. Furthermore, potatoes are an excellent source of vitamin C and potassium, which can help keep your skin strong and looking its best. Additionally, you get a boost of protein with this recipe because of the addition of the cottage cheese and milk. Bonus Alert: Each ½ cup serving provides 10 grams of protein and only 2 grams of fat! Ingredients
3 russet potatoes, cut into 1 inch chunks
½ cup nonfat milk
1 cup fat free cottage cheese
½ cup Parmesan cheese, shredded
1 Tbsp onion powder
1 Tbsp garlic powder
Salt and pepper to taste
Toppings (optional)
Parsley, chopped
Instructions
Bring a large pot of water to a rolling boil. Add potatoes to pot and cook for 8 minutes or until fork tender.
Drain the potatoes and return to the pot. Add all other ingredients, except parsley, to the pot with the potatoes.
Mash with a potato masher or use an immersion blender to blend potatoes to desired consistency. Add salt and pepper to taste. Optionally, but worth it, top with chopped parsley.
