Healthy Low Calorie Cauliflower Mash is your solution to eating more veggies. As a bonus this recipe has a kick of protein from the cottage cheese. The fiber from the cauliflower, the protein from the cottage cheese, and the fat from the parmesan cheese, means eating this dish will help to make you feel full and satisfied. Cauliflower is also an excellent source of antioxidants which reduce inflammation in your body. Bonus Alert: This is a one-pot dish! Easy-peasy-one-two-cheesy. *I love using this Kyocera Ceramic Knife to easily cut the head of cauliflower into florets. Using an immersion blender is amazing because you can blend everything in the pot you just made the cauliflower mash in. It results in way less dishes and the immersion blender is extremely easy to clean.

Ingredients
  • 1 head cauliflower, cut into florets
  • ½ cup low fat cottage cheese
  • ½ cup parmesan cheese, shredded
  • ¼ cup 1% milk
  • Salt and pepper to taste
  • Toppings (optional)
  • Parsley, chopped
Instructions
  1. Bring a large pot of water to a rolling boil. Boil the cauliflower for 6 minutes or until fork tender.
  2. Drain the cauliflower.
  3. Add cauliflower back to the pot and add remaining ingredients.
  4. Use an immersion blender to blend to desired texture.
  5. Heat on medium-low for 2 minutes. Top with chopped parsley as desired.
