Ingredients
1 Tablespoon olive oil
8 brown onions, sliced
1 Tablespoon thyme leaves
2 Tablespoons plain (all-purpose) flour
2 Tablespoons brandy
2 Tablespoons Dijon mustard
8 cups (3 ½ pints) beef stock
2 cups (16 ounces) water
Toppings (optional):
Parmesan cheese, shredded
Crusty bread
Instructions
Over medium heat, add the olive oil to a Cuisinart Classic Enameled Cast Iron 7-Quart Casserole Pot. Put the onions and thyme in the pot. Cover and cook for 35 minutes. Stir occasionally so the onions don't burn. They'll look soft and golden when done and be caramelized.
Stir in the flour for 3 minutes. Put in the brandy and stir for 1 minute.
Add the mustard, stock, and water and allow to simmer for 15 minutes.
Remove from the heat and serve with Parmesan cheese and crusty bread as desired.
