Ingredients
2 cups raw green apples, diced (1 ½ apples)
1 cup flour
2 tsp cinnamon
½ tsp salt
1 tsp baking soda
1 egg
1 cup sugar
¼ cup melted coconut oil
1 cup raisins
Instructions
Heat an oven to 350°. Chop the apples.
In a medium bowl, combine the flour, salt, and baking soda. Mix with a spoon.
In a large bowl, mix the egg with the diced apples and cinnamon. Add the sugar and melted coconut oil and stir with a large spoon. Add the raisins. Stir in the flour mixture.
Add the batter to an 8x8 Pyrex dish. Put in the oven for 40-45 minutes.
Use a knife to check for doneness. If the batter clings to the knife, bake it a little longer. If the knife comes out clean, remove the cake from the oven. Let cool for 10 minutes then serve.
