Avocado, Mango & Cucumber Salad with Cilantro-Lime Dressing

I’m a huge fan of Latin-inspired dishes and anything with avocado excites me. Both avocados and mango provide you with vitamin E & C which are great for glowing skin and a healthy immune system. Mangos are also fabulous sources of vitamin A which is perfect for strong eyesight. Avocado, mango & cucumber salad with cilantro-lime dressing is refreshing, tasty, and exquisite. Pair this salad with tacos, enchiladas, nachos, fajitas, or roasted chicken and you’ll enjoy a complete meal.

Ingredients
1 avocado
1 mango
½ cup queso fresco
1 cucumber
Dressing:
1 bunch cilantro
2 Tbsp lime juice
1 Tbsp olive oil
Salt to taste
Instructions
In a food processor or blender, puree the cilantro, lime juice, olive oil, and salt to make the dressing.
Chop the avocado, mango, and queso fresco into 1-inch cubes or chunks.
Peel the cucumber. Chop the cucumber into 1-inch cubes or chunks.
Put the avocado, mango, queso fresco, and cucumber into a big bowl.
Mix in 6 Tbsp of the dressing. (You’ll have leftover dressing for another dish, too). Serve.
