I’m a huge fan of Latin-inspired dishes and anything with avocado excites me. Both avocados and mango provide you with vitamin E & C which are great for glowing skin and a healthy immune system. Mangos are also fabulous sources of vitamin A which is perfect for strong eyesight. Avocado, mango & cucumber salad with cilantro-lime dressing is refreshing, tasty, and exquisite. Pair this salad with tacos, enchiladas, nachos, fajitas, or roasted chicken and you’ll enjoy a complete meal.

Ingredients
  • 1 avocado
  • 1 mango
  • ½ cup queso fresco
  • 1 cucumber
  • Dressing:
  • 1 bunch cilantro
  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • Salt to taste
Instructions
  1. In a food processor or blender, puree the cilantro, lime juice, olive oil, and salt to make the dressing.
  2. Chop the avocado, mango, and queso fresco into 1-inch cubes or chunks.
  3. Peel the cucumber. Chop the cucumber into 1-inch cubes or chunks.
  4. Put the avocado, mango, queso fresco, and cucumber into a big bowl.
  5. Mix in 6 Tbsp of the dressing. (You’ll have leftover dressing for another dish, too). Serve.
