Ingredients
4 pieces Light Italian Flatout® Flatbread
½ cup DiGiorno® Parmesan Shaved Cheese + more for a little sprinkling
1 cup Shredded Mozzarella Cheese
Cooking Spray
4 Eggs
½ package Marketside® Arugula (2.5 oz)
2 Tbsp White Wine Vinegar
1 Tbsp Extra-Virgin Olive Oil
Salt & Pepper to taste
Instructions
Preheat the oven to 375° Bake. Spray a baking pan with cooking spray. Place the Light Italian Flatout® Flatbread on the pan and cover the 4 pieces evenly with the parmesan and mozzarella cheese. Bake in the oven for 3 minutes.
Meanwhile, spray a small skillet with cooking spray. Crack the eggs in it and cook them sunny-side up for about 1 ½-2 minutes each.
Take the Light Italian Flatout® Flatbread out of the oven and place the eggs over the bread. Place in the oven and bake for another 3 minutes.
While the pizza is baking, mix the arugula with the vinegar, oil, salt, and pepper.
Remove the pizza from the oven and top with the arugula salad.
Sprinkle a little extra parmesan cheese over the top (optional). Cut and serve. Each person gets his/her own personal pizza.
