We all have days where we are exhausted, tired, stressed, and worn out by the time dinner rolls around. The thought of trying to make a meal can be overwhelming. Also, the option of actually going to a store to get fresh vegetables and protein might be non-existent. So this is when I love going into my cupboard to concoct a fabulous, healthy meal in minutes. You will be surprised how easy it can be to make a well-balanced dish, which includes vegetables, protein, and starches, and all from items in your cupboard. This week’s menu for Cupboard Cookout: Green Bean Medley with Tuna Salad.
- 1 can green beans, drained and rinsed
- 1 can wax beans, drained and rinsed
- 1 can garbanzo beans, drained and rinsed
- 2 cans tuna in water, drained
- 2 Tbsp lemon juice
- ¼ tsp garlic powder
- ½ tsp oregano
- ½ tsp thyme
- ½ tsp basil
- ½ tsp lemon pepper
- Salt & Pepper to taste
Toss everything together in a bowl. Serve! It’s that simple.
