Baked Apple Cake
Wow. Wow. Wow. This Baked Apple Cake is uncontrollably delicious. You can eat it for breakfast (yes – it will be a super sweet one) or for dessert. If you eat it for breakfast, enjoy a cup of Greek yogurt on the side or a hard-boiled egg for some protein to have a complete meal.
This Baked Apple Cake is very simple and fast to prepare, so get ready for some easy love in one dish.
- 2 cups raw green apples, diced (1 ½ apples)
- 1 cup flour
- 2 tsp cinnamon
- ½ tsp salt
- 1 tsp baking soda
- 1 egg
- 1 cup sugar
- ¼ cup melted coconut oil
- 1 cup raisins
Heat an oven to 350°. Chop the apples.
- In a medium bowl, combine the flour, salt, and baking soda. Mix with a spoon.
- In a large bowl, mix the egg with the diced apples and cinnamon. Add the sugar and melted coconut oil and stir with a large spoon. Add the raisins. Stir in the flour mixture.
- Add the batter to an 8x8 Pyrex dish. Put in the oven for 40-45 minutes.
Use a knife to check for doneness. If the batter clings to the knife, bake it a little longer. If the knife comes out clean, remove the cake from the oven. Let cool for 10 minutes then serve.
