I prefer simplicity and ease in my life. Most days, my life seems like a never-ending checklist with things to do, places to go, and obligations to complete. When it comes to cooking, I enjoy eating delicious food. However, I want that food to be easy to cook and, most importantly, easy to clean up! Therefore, having a meal in one pot means less dishes and simplicity! Here are my 5 favorite one-pot meals to make that are low fat, well-balanced, delicious, nutritious, and effortless!
5 Baked Bean Chili: This is one of my favorite dishes for dinner, parties, barbeques, and more. I love it because you make 1 big pot of the chili and you can serve many mouths. A true classic comfort meal in one-pot.
Classic Roasted Chicken: I love my roasting pan and by adding in potatoes and carrots, you’ve got your protein, starch, and vegetable all in one-pot and the dish is so easy to prep, too!
Tuna Noodle Casserole-Revamped: My version of the tuna noodle casserole includes broccoli which gives you veggies in your pasta and protein mix! Enjoy the easy clean-up with this classic, cheesy one-pot meal.
Rainbow Vegetable Chili: This chili is loaded with vegetables you get every color of the rainbow in it! Since you add tofu and black beans, you have protein from the tofu and beans and starch from the beans. Therefore, your chili has all the necessary components of a wonderfully nourishing and satisfying meal!
Mustard Balsamic Glazed Chicken With Butternut Squash: This crockpot dish is simple to prepare and easy to make with no extra cooking on your part! Just marinate the raw chicken overnight. In the morning before work, layer all the ingredients in the crockpot and you’re ready to eat a well-rounded meal when you get home! Fantastic!
Enjoy your one-pot meals with ease and love.
What other simple dishes do you like to make?

This is perfect! I have been staring at my crock pot with guilt from not using it all Winter long. Going to give the Rainbow chili a try.
That’s one of my favorite recipes! Whenever I’m feeling I like I need more veggies in my life..Boom! I’ve got every color of the rainbow in 1 dish! Hope you enjoy! Thanks!
Cool! These are great suggestions. I’ve got a weakness for tuna casserole, so I’ll have to try your version!
This version is from my mom. I tweaked it a little but still has all the love. Hope you enjoy!
Mmmm…..I’m having a love affair with my crock pot at the moment and love your recipe ideas. Thanks for sharing x
What a great love affair to have! Keep that relationship going strong 🙂 It makes life so easy! Thanks for commenting Sonja!
Sarah,
I am with you on the simplicity. These recipes look great. I make a lot of “bowls” in our house so that we just have a bunch of fresh ingredients available and then use greens or grains as a base then assemble veggies and protein on top. Quick & easy!
Fantastic tip Elise! I love that idea of having the fresh around, then adding the other staples. Thanks for sharing!!!
Awesome recipes! Thank you, I am always looking for healthy, simple, quick, and easy meals. My family loves roasted chicken so next time I am trying your recipe. Thanks again!
Yummy! Thank you! Fast, Easy, & Delicious is so important when feeding family Janelle!
Yum! I’ll give the Tuna Noodle Casserole a try this weekend for sure! Thank you for sharing your amazing one pot recipes Sarah.
Awesome! You’ll LOVE it!
Hi Sarah, these sound amazing, especially the last one. And thank you for the chili variation! I make veggie chili too but sometimes just get tired of it.
Something I have been making recently that I like a lot is sort of a veggie greek pizza. I use the small personal pizza crust but instead of tomato sauce I use a basil pesto, sliced tomato, feta cheese, artichoke hearts, and Klamata olives. It’s amazing!
Wow! Veggie pizza sounds delicious! And super easy. Thanks for the tip! Now I have another recipe to make this week for dinner! Awesome!
I am literally downloading ALL of these to try this month – thank you!!
Fantastic Summer! You’ll love them!
As a fellow foodie and nutritionist I can relate whole heartedly! I am a HUGE fan of one pot meals, I love having everything together and I think it ultimately makes dinner more convenient. Thanks for the ideas!
Thank you Heather! Convenience is so important!
Sarah,
I also like my days to be filled with simplicity and ease…you are right, a lot of times it turns into just a check list and tons of places to go and be, with obligations to meet! Thanks for these recipes to bring more simplicity and ease into the day to day. I cannot wait to try the chicken and butternut squash!
Thank you Court! Check that delicious meal off your list! Enjoy!
i absolutely love coming across new (time-saving) recipes to try and all of these sound DELICIOUS, sarah. more importantly, they look like dishes my family will like too. i’m going to make the mustard balsamic glazed chicken with butternut squash this week – thank you!
Thank you April! Your family will be happy with that meal! Buen provecho!
Yummy stuff. By any chance, do you know any place to find canned/packaged tuna that DOESN’T have soy in it? I had to give it up when I discovered an intolerance, and Tuna steaks just aren’t the same.
Hi Lisa! You bring up SUCH a good point about many brands of canned tuna containing soy from the vegetable broth. Very disturbing. Trader Joe’s canned tuna is soy-free. Here’s a link to their media release last July: http://www.traderjoes.com/about/customer-updates-responses.asp?i=39
This is PHE-nomenal! I love one pots and am always looking for new ones! Thanks for sharing!
Thank you Susan! Buen provecho!
I love a good one pot meal! Roast chicken is my go-to, and lately I’ve been loving slow cooked pork belly. Just stick it in the slow cooker and go! Thanks for the recipe inspiration! x
Yum! Slow cookers make life so much easier! Thanks for sharing Sam!
One pot meals the only sane way to cook for busy families
I completely agree Tami!
